The St. Regis Princeville Resort has collaborated with Dom Pérignon to debut a private dining experience for guests.
The St. Regis Princeville Resort’s Royal Dinner with Dom Pérignon is a private and memorable dining experience for two, at a beautiful outdoor setting enhanced by soft candlelight and Hawaiian torchlight, offering a customized seven course menu paired with bottles of champagne. The experience begins when the guests’ private wait staff greets them in the lobby with a lei presentation and escorts them to their secluded dining area where they will begin their dinner with a champagne toast (Dom Perignon 2004) and will enjoy a private sabering lesson, learning how to master the impressive art of sabering, a St. Regis tradition.
The dinner, customized to fit the tastes of each guest who can select from a variety of menu options, begins with an amuse-bouche followed the first course, such as Barely Touched Salmon with yuzu kosho, green apple, radish, followed by a second course such as Homemade Angel Hair and Pearls with Vodka crème Fraiche, caviar, and bottarga that is paired with Dom Perignon Luminous 2006. There will be an intermezzo course, following by a delectable entrée such as Grilled Kona Lobster with wilted spinach, butter fried garlic & ginger paired with Dom Perignon Rose Luminous, 2004, followed by a Chocolate Dome, and a dessert of choice, pared with Dom Perignon P2, 1998. Guests also have the opportunity to consult with the St. Regis Princeville Sommelier to select more range vintages should they wish. Following the dining experience, guests can bring any unfinished bottles back to their room to enjoy during their stay, or any unopened bottles can be shipped home to enjoy at a later date.
