The type that got the most attention, and even the highest price, was a blue cheese from the Valfríu cheese factory — one of the strongest blue cheeses in the world. Named Cabrales, this cheese matured in the caves of Picos de Europa, where it stands for three to six months, with weekly rubbing and rotating.
It is especially demanded for its complicated production, which requires workers to walk more than a kilometer carrying it on their shoulders. The auction offered nearly three kilos of this cheese, and Ivan Suarez, owner of El Llagar de Colloto, won offering $16,223.
Commenting on the expensive cheese, a person from the factory said: “In all likelihood, the competition did not end and lasted almost two hours. The audience was lively and applauded.
