The Rity-Carlton is one of the best ranked luxury hotels around the world, thanks in most part to their unparalleled service and a wide range of extravagant amenities. Since that’s not enough for such iconic brand, so they’ve gone and created a signature cake. Simply named The Cake, this signature dessert will become the edible symbol of the brand around the world which could travel well as hotel’s anticipated guests would take them home as gifts.
The recipe was chosen from 23 proposals after Corporate Chef Rainer Zinngrebe issued a challenge to his staff around the world. He asked them to create a recipe for a cake that followed these three rules: It must use Valrhona chocolate, it must use Grand Marnier (or orange flavoring in religious countries), and it must be able to travel well (so it cannot use ingredients that will spoil quickly).
After an extensive taste-test , the chef with the winning cake was Yusuke Aoki of the Ritz-Carlton Toronto. His dessert is a long rectangular cake – a sponge cake mixed with three different kinds of chocolate and layered with bitter caramel and orange ganache (a combination of candied fruit and Grand Marnier). It’s topped with another fine strip of chocolate, stamped with the Ritz-Carlton lion logo and packaged perfectly with a white bow.
